Cheesy Penne with Arugula

85 g Penne (whole wheat)
Zucchini
Sun-dried tomatoes
Canned tomatoes
Mozzarella
Arugula 1
1 TBL sp Red onion
Oregano
Prep
10 min
- Dice onion
- Cut zucchini into small cubes
- Cut sun-dried tomatoes in small strips
- Cut mozzarella into small cubes
Cook
20 min

Cook pasta
~10 min

In the meantime, sauté onion
medium/high heat ~3 min
Add zucchini, sun-dried tomatoes
stir ~3 min
Add canned tomatoes and oregano
bring to a simmer ~5 min
Add drained cooked pasta
turn off heat, stir ~1 min
Add arugula and mozzarella
stir slightly ~1 min
