Broccoli Kohlrabi Penne

Ingredients

100 g Penne
Kohlrabi
Broccoli
Lemon
Cashews 500 ml
90 g

1 clove (Soy) cream
Green pesto
Onion
Garlic

Prep

10 min

  1. Dice onion and mince garlic
  2. Cut broccoli into small florets
  3. Peel kohlrabi, halve and cut into 1 cm cubes

Make it a dinner party🎉

Roast the cashews in the beginning in a dry pan and add them at the end

Cook

30 min

pan 1

Sauté kohlrabi on all sides

until slightly browned, take out and set aside, medium/high heat ~5 min

pan 2

In the meantime, cook pasta

save pasta water ~10 min

pan 1

Sauté onion in same pan

~2 min

Add garlic and broccoli

~3 min

Add cream, pesto and kohlrabi

cover with lid and let simmer, stir and add extra pasta water if needed ~10 min

Add lemon juice and zest

Add salt and pepper to taste ~1 min

Serve pasta with sauce and vegetables. Garnish with cashews.
