prefer them very soft then cook them before adding to the sauce.

The ‘holy trinity’ of Creole cuisine is celery, peppers, and onions. In this version it’s really important to use smoked paprika powder and use plenty of it.

Even someone who usually doesn’t like sauerkraut liked it. The portions are quite big because sauerkraut comes in packs of 500 g.
