Place the stem on its long side and on each side cut away the rough skin in thick slices so you&#8217;re only left with the soft inner part. Cut into small cubes and cook with the rest of the broccoli.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/fr-wp.cowdev.com\/wp-content\/uploads\/2023\/02\/Untitled-11-300x200.png\" alt=\"broccoli stem food waste\" width=\"300\" height=\"200\" \/><\/p>\n\t<p>Cook<\/p>\n\t<p>20 min<\/p>\n\t\t\t\t<img decoding=\"async\" src=\"https:\/\/fr-wp.cowdev.com\/wp-content\/uploads\/2020\/01\/pan-1b.png\" alt=\"pan 1b\" itemprop=\"image\" title=\"pan 1b\" onerror=\"this.style.display='none'\"  \/>\n\t<p>Saute\u0301 onion and mushrooms<\/p>\n\t<p>high heat ~2 min<\/p>\n\t<p>Reduce heat and add garlic and ginger<\/p>\n\t<p>medium heat, until mushrooms have shrunk ~5 min<\/p>\n\t<p><strong>Boil water for bouillon (200 ml)<\/strong><\/p>\n\t<p>Add rice and soy sauce<\/p>\n\t<p>a bit unusual but the rice is cooked with the mushrooms ~2 min<\/p>\n<p>Add coconut milk and bouillon<\/p>\n\t<p>bring to boil. Then reduce heat to simmer and put on the lid. Taste halfway and add more bouillon if necessary. ~12 min<\/p>\n\t\t\t\t\t\t\t\tWhy we&#8217;re cooking the rice in coconut milk\n\t\t\t\t<p>Cooking the rice with the other ingredients and coconut milk creates a delicious creamy texture with lots of flavour (similar to risotto).<\/p>\n<p>Of course this requires the right proportions because you don&#8217;t want to drain the coconut milk and lose all the flavor. Adding too much liquid gives a wet dish, but if you don&#8217;t add enough the rice doesn&#8217;t cook through. In general you need 1,5 times the amount of liquid compared to rice. For 350 g rice that means about 400 ml coconut milk plus 200 ml bouillon.<\/p>\n\t\t\t\t<img decoding=\"async\" src=\"https:\/\/fr-wp.cowdev.com\/wp-content\/uploads\/2020\/01\/pan-2.png\" alt=\"pan 2\" itemprop=\"image\" title=\"pan 2\" onerror=\"this.style.display='none'\"  \/>\n\t<p>Cook broccoli<\/p>\n\t<p>~5 min<\/p>\n\t\t\t\t\t\t\t\tTip for perfectly cooked broccoli\n\t\t\t\t<p>When you cook green veggies too long they get mushy and brown. Add the broccoli when water is already boiling and cook for about 5 minutes (until you can easily pierce with a fork).<\/p>\n<p>Then drain the broccoli and rinse under cold water for 10 seconds. This stops the broccoli from cooking further and becoming too soft.
