\nCurry powder
\nChilli flakes
\nLemongrass
\nLaos
\nLime
\nOnion

Prep<\/p>\n\t

5 min<\/p>\n\t

  1. Mince garlic and dice onion<\/li>\n
  2. Grate ginger<\/li>\n
  3. Peel sweet potatoes and cut into 1 cm cubes<\/li>\n<\/ol>\n\t

    Cook<\/p>\n\t

    25 min<\/p>\n\t\t\t\t\"pan\n\t

    Saute\u0301 onion<\/strong><\/p>\n\t

    medium heat ~3 min<\/p>\n\t

    Add ginger and garlic<\/strong><\/p>\n\t

    medium heat ~2 min<\/p>\n\t

    Add curry powder, chilli flakes, lemongrass and laos<\/strong><\/p>\n\t

    medium heat ~1 min<\/p>\n\t

    Add coconut milk, water, peanut butter, lentils and sweet potatoes<\/strong><\/p>\n\t

    mix well, cover with a lid, lower heat, simmer and stir occasionally ~12 min<\/p>\n\t

    Add spinach and lime juice<\/strong><\/p>\n\t

    add spinach and squeeze the lime and let everything simmer until warm ~3 min<\/p>\n

    taste and add salt and pepper if needed<\/p>\n\t
